SOMMELIER

SOMMELIER is one of the most important fields of gastronomy focused on wine (enogastronomy), wine service and wine & food pairing. Exclusive profession of the wine sommelier / wine steward has experienced its heyday in the 19th century with first large hotels & exclusive restaurants.

The etymological origin of the word SOMMELIER is maybe in Old Provençal (old dialect of the attractive French region - Provence / Provença), where a "saumalier" was a pack animal driver and the term "sauma" was a pack animal or the load of a pack animal - for example the wine.
